This fascinates me but arnt they two in the same? If you drank the blood of a human you are more or less a cannibal arnt you?

They are not exactly the same. Sure, they feed from others, but the cannibal eats the flesh while the vampire just drinks the blood. That's pretty much the major difference. Plus, a cannibal could be among you even in the day. A vampire couldn't survive crossing water when a cannibal would swim for anything. A vampire could be based off a cannibal but made less gruesome in the early stories, thus the numerous amount of differences between a vampire and a cannibal.

Short reply, no way are they the same. Drinking blood doesn't qualify one to be either, My concept, the cannibals will devour a body while a vampire is simply after the blood and seldom eats anything, from what I have read and from what "vamps' have told me about their lifestyle.Interesting question though.
